carbohydrates

The carbohydrates found in carrots are made up of starches and sugars, such as sucrose and glucose (1). This is why carrots score relatively low on the glycemic index. This is a measure of how quickly food causes blood sugar to rise after a meal.

But this applies only to boiled or mashed carrots. The glycemic index of raw carrots is completely safe (2). For this reason, especially diabetics should use raw carrots to keep their blood sugar as low as possible.

Lif

What makes carrots healthy is the fiber in carrots, which can lower high blood sugar by slowing the digestion of sugars and starches. The main form of fiber found in carrots is called pectin.

Pectin increases the number of friendly bacteria in the gut, which can be associated with a healthier gut flora on the one hand, but also with a lower risk of disease.

In addition to pectin, which is a soluble fiber, carrots also provide insoluble fiber such as cellulose. This type of fiber can reduce the risk of constipation and promote regular and healthy bowel movements.

vitamins and minerals

Besides providing energy, fiber and few calories, carrots are healthy as they are an excellent source of vitamins and minerals. Especially vitamin A and biotin are worth mentioning here.

Carrots are high in beta-carotene, which is converted to vitamin A in the body. Vitamin A has been associated with eye health, healthy growth, beneficial overall development and immune function.

Biotin is one of the B vitamins and it does its job especially in fat and protein metabolism.
